Vidalia Onion Dip
Ingredients
- 3 tablespoons olive oil
- Butter
- 1.5-2 pound Vidalia onions (diced) (4 large onions)
- 1/4 teaspoon + pinch of baking soda
- 1 tablespoon dark brown sugar
- 1 teaspoon kosher salt (divided)
- 1 1/2 cups sour cream
- 3/4 cup mayonnaise (this might be a tad bit too much)
- 1/4 MAX teaspoon garlic powder
- 1/4 teaspoon white pepper (freshly ground)
Instructions
- Slice onions and add baking soda, sugar, and 1/2 teaspoon salt. Mix well. Rest for 10 minutes.
- Place the oil, butter, and onions in a 10-inch saute pan over medium heat.
- Cook, stirring occasionally, until the onions Have Reduced by 75%, about 5 minutes.
- Reduce Heat to Medium and cook . Reduce heat to medium low after 5 minutes for about 15-20 minutes more until onions are dark golden brown (a total of about 30-40 minutes). Remove from the heat and set aside to cool for 15 minutes.
- Place the remaining ingredients and the remaining 1/2 teaspoon salt in a medium mixing bowl, add the cooled onions and stir to combine.
- Refrigerate overnight and stir again before serving.
