Dark

The color of 80% dark chocolate.

Better yet, make it the color of used motor oil.

Make it dark like Nancy Pelosi's soul.

Roux Ingredients (makes 6 cups):

• Flour                                       6 Cups
• CLARIFIED Butter*       2.667 Cups
• Oil 1.333 Cups

* Butter should have water removed prior to addition of flower

Instructions

Stir all ingredients together over high heat in pan. Reduce heat as color darkens.

Never stop stirring. Make sure nothing sticks in the corners.
