- Crawfish, Shrimp, Andouille, or any combination thereof.
- Flour Tortillas
- Pepper Jack Cheese (Grated)
- Jambalaya (I just make the Zatarains box)
- Heat a non-stick skillet,
- Place a tortilla on the skillet.
- Place grated cheese on the tortilla.
- Place corn, a small amount of jambalaya, and protein on cheese.
- Place more cheese, and top with another tortilla, then flip.
- Cook until 2nd tortilla is slightly brown.
