Fried Trout (Meuniere!)

- 2 Jumbo/XL Eggs
- 1.5 cups half & half
- 0.5 cups Whole Milk
- 1 teaspoon Salt
- 1/2 teaspoon ground pepper
- 6 Speckled Trout Fillets
- 2+ Cups all-purpose flour
- Frying Fat (I tend to use clarified butter)
- Meuniere Sauce
- Lemon Wedges
Instructions
- Make Wash - Whisk eggs, milk, half & half , salt, and pepper
- Dust fillets with flour
- Submerge in wash and allow excess to drip off.
- Dredge fillets into flour then very gently shake off excess.
- Fry in fat 4-5 minutes, until golden and floating.
- Plate and top with Meuniere butter and lemon wedges.
- Serve immediately.
