Fried Trout (Meuniere!)




Ingredients

  • 2 Jumbo/XL Eggs
  • 1.5 cups half & half
  • 0.5 cups Whole Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon ground pepper
  • 6 Speckled Trout Fillets
  • 2+ Cups all-purpose flour
  • Frying Fat (I tend to use clarified butter)
  • Meuniere Sauce
  • Lemon Wedges



Instructions

  1. Make Wash - Whisk eggs, milk, half & half , salt, and pepper
  2. Dust fillets with flour
  3. Submerge in wash and allow excess to drip off.
  4. Dredge fillets into flour then very gently shake off excess.
  5. Fry in fat 4-5 minutes, until golden and floating.
  6. Plate and top with Meuniere butter and lemon wedges.
  7. Serve immediately.
